Abstract

Produksi keju Mozzarella pada sebagian besar Usaha Mikro, Kecil, dan Menengah (UMKM) masih dilakukan secara manual, terutama pada proses pengadukan curd, sehingga membutuhkan waktu yang lama dan tenaga kerja yang besar. Penelitian ini bertujuan merancang dan menguji mesin pengaduk keju Mozzarella type Brumagin berkapasitas 25 kg/jam untuk meningkatkan efisiensi produksi. Metode yang digunakan meliputi perancangan, pembuatan, dan pengujian alat. Mesin menggunakan pengaduk type Brumagin berbahan stainless steel yang digerakkan oleh motor listrik dengan sistem transmisi gearbox, pulley, dan V-belt. Hasil pengujian menunjukkan bahwa mesin mampu menghasilkan keju Mozzarella yang homogen, elastis, tidak berkerak, dan tidak mudah putus. Selain itu, waktu pengadukan 25 kg bahan berkurang dari 120 menit secara manual menjadi 60 menit menggunakan mesin. Dengan demikian, mesin yang dirancang mampu meningkatkan efisiensi waktu produksi hingga 50% tanpa mengurangi kualitas produk.
